VEGAN SEITAN HOMEMADE


Today sun is shining in Milan, it's almost Spring and it's Sunday.
Three things that together make a perfect combo, expecially if you have NOTHING to do!
So, between a looong sleep and a walk in the sun, here my recipe for a delicious vegan seitan (it's not a gluten-free food, because of seitan is gluten!).
I advise you: it's not a quick recipe, so give up and prepare yourself spending some time in your kitchen!
It will be worth it.

Oggi splende il sole a Milano, è quasi primavera ed è domenica.
Tre cose che insieme fanno una combinazione perfetta, specialmente se non si ha NULLA da fare!
Dunque, tra un dormita lunghissima e una camminata al sole, beccatevi la mia ricetta per un delizioso seitan vegan (non è una ricetta gluten-free dal momento che il seitan è glutine!).
Vi avviso: non è una ricetta breve, dunque mettetevi il cuore in pace e preparatevi a passare un po' di tempo nella vostra cucina!
Ne varrà la pena.

Time // Tempo:

About 4 hours (minimum) // Circa 4 ore (minimo).

Difficulty // Difficoltà:

Ingredients // Ingredienti:

For a 18 oz. (500 gr) seitan: 
- 2.2 lb. (1 Kg) strong (Manitoba) flour
- 1 pint (600 ml.) of water
- soy sauce
- herbs and spices to your taste for the broth
- miso
- turmeric
- salt.

Per 500 gr. di seitan:
- 1 Kg di farina Manitoba
- 600 ml di acqua
- salsa si soia
- erbe e spezie a vostro piacimento per il brodo
- miso
- curcuma
- sale.

How to // Come procedere:

1)
Place the flour in the middle of your countertop, and start kneading puring water little by little. // Posizionate la farina al centro del vostro piano da lavoro e cominciate ad impastare versando l'acqua un poco alla volta.

After about 15-20 minutes of perfect workout for your arms, you should obtain a loaf like this. You can also see my supervisor waiting for something falling down from my countertop :D  Sweet clever Miya! // Dopo circa 15-20 minuti di allenamento perfetto per le vostre braccia, dovreste ottenere una pagnotta tipo questa. Potete anche vedere la mia assistente in attesa che mi cada qualcosa dal piano :D Dolce furba Miya!


3)
Put your loaf in a bowl and cover it with cold water. Leave it rest for 1 hour minimum (but also for the whole night if you're already tired). // Mettete la vostra pagnotta in una ciotola e copritela con dell'acqua fredda. Lasciatela riposare per minimo 1 ora (ma volendo anche per tutta la notte se siete già stanchi).

Now a delicate phase: put the bowl under the tap water, but very little flowing. Work your loaf as log as the water will be transparent. It could take you 10-15 minutes. Ehm, I made a tea rest before haha!  // Ora un passaggio delicato: mettete la ciotola sotto l'acqua corrente, ma aperta a filo. Lavorate la pagnotta finché l'acqua non diventerà trasparente. Potrebbe prendervi 10-15 minuti. Ehm, io ho fatto una pausa tè prima ahah!

Meanwhile, boil some salty water in a big pot. // Nel frattempo, fate bollire dell'acqua salata in una grossa pentola.


6)
Make a cute bundle with a white fabric around your loaf, and put the seitan in the boiling water "dressed" like this. Leave it simmering for 30-40 minutes. Meanwhile, prepare another pot, but now you can add to the water herbs and spices you like more. I used, for the broth, a mix of herbs, soy sauce, miso and turmeric. Use your fantasy and then have a break, you deserve it!  // Fate un bel fagotto intorno alla pagnotta con del tessuto bianco, e mettete il seitan così "vestito" nell'acqua bollente. Lasciatelo sobbollire per 30-40 minuti. Nel frattempo, preparate un'altra pentola, ma ora all'acqua potete aggiungere erbe e spezie che più vi piacciono. Io ho usato per il brodo un mix di erbe, salsa di soia, miso e curcuma. Usate la vostra fantasia, poi fate una pausa che ve la meritate!

Transfer the seitan in the other pot and let it simmering for other 30 minutes. // Trasferite il seitan nell'altra pentola e lasciatelo sobbollire per altri 30 minuti.

At the end, you'll obtain this cute ball. // Alla fine, otterrete questa bella palla.

You can conserve it in pieces, dry and in an airtight container for the freezer (it will keep 2-3 months) or in its broth for the fridge (it will keep 1 week). // Potete conservarlo in pezzetti, asciutto e in contenitore ermetico per il freezer (dove durerà 2-3 mesi) o nel suo brodo per il frigo (dove durerà una settimana).
